Mushroom Stuffing

180 grams butter
100 grams packet pine nuts
2 red onion
4 slices bacon
250 grams mushrooms
6 cups fresh breadcrumbs
2 egg
1 teaspoon salt
  pepper to taste
  •  Melt butter in pan ,add  pine nuts, and  chopped onions  cook till onions are   transparent
  •  Add finely chopped bacon (rind removed)  and chopped mushrooms fry a little more
  • Take off the fire , mix the bread in and when a little cooler mix the raw egg , pepper and salt.
  • generally make double quantities and bake it in a loaf tin , as this is too much to stuff a turkey
  • I bake it in a 180C for about half a hour , so it doesn’t dry out too much
